
Spinach and Cheese Stuffed Chicken Breast








Preheat the oven to 375°F (190°C).
In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant.
Add spinach to the pan and cook until wilted. Remove from heat and let it cool.
In a bowl, mix together the cooked spinach, cheddar cheese, salt, and black pepper.
Slice the chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Stuff the chicken breast with the spinach and cheese mixture.
Secure the opening with toothpicks to keep the filling inside.
In a baking dish, place the stuffed chicken breast and brush with olive oil.
Season the top with chili powder and additional salt and pepper if desired.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the juices run clear.
Let the chicken rest for a few minutes before slicing and serving.
