Preheat a non-stick pan over medium heat and add olive oil.
Sauté garlic until fragrant, then add spinach. Cook until wilted.
In a bowl, beat the eggs with salt and pepper.
Pour the eggs into the pan with the spinach and scramble until cooked through.
Warm the whole wheat tortillas in a separate pan or microwave.
Slice the avocado and apple thinly.

Sprinkle a little cinnamon on top for added flavor.
