
Vegetarian Chickpea Burger with Avocado and Spinach







Preheat oven to 180°C (350°F).
In a large mixing bowl, mash the canned chickpeas until smooth.
Add finely chopped spinach, minced garlic, cumin powder, salt, and black pepper to the chickpeas. Mix well.
Stir in almond flour and a beaten egg to bind the mixture.
Form the mixture into burger patties of desired size.
Place the patties on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20 minutes, flipping halfway through to ensure even cooking.
While the patties are baking, slice the avocado and red onion. Set aside.
Toast whole wheat bread slices or buns until golden brown.
Once the patties are done, assemble the burgers by layering the chickpea patty, avocado slices, and red onion on the toasted bread.
Serve with a side of mixed greens or a light salad.
